Matured sheep cheese
This mature sheep cheese is made on the island of Texel in the Netherlands where sheep cheese has been made for over 500 years! This variant is made on the cheese farm Wezenspyk with the old recipe and still carries the quality mark for sheep cheese that has been used on the island for 400 years. This mature sheep cheese has matured for 6 months and gives the cheese a slight nutty taste. The taste is mainly determined by the milk used in this cheese. This milk comes from the Texel sheep, a world famous race. The combination of the rugged climate and the land on Texel on which these sheep live gives this cheese a unique taste.
